By milling the grains ourselves, we can  guarantee that the flour produced is of the highest and purest quality, and that its freshness is unparalleled.

About Micro Milling

IMG_2608_2_1.JPG­           Here in the Microclimate of the Hudson Valley, Lightening Tree Farm our main organic grain producer grows some of the most delectable, nutrient-dense grain in the region. Because this resource is situated only nine miles from our own Wild Hive Farm, we receive the grain at the peak of its freshness, and mill it immediately in order to achieve a quality of taste that is bursting with life. Furthermore, all of our milled flours contain 100% of their original germ content, which allows the consumer to reap the total vitamin benefits of the grains. Our course ground flours contain the highest percentage possible of their natural bran, which allows for a high level of natural mineral and fiber content.

IMG_2531_reduced.jpg Our practices of micro milling do not only achieve high standards of taste and nutrition. Another important aspect of our milling and wood-fired baking process is energy and fuel conservation. Due to the locality of our growers and consumers, as well as our environmentally friendly and energy-efficient business practices, we have managed to reduce our Carbon Footprint*. This means that less pollution is created by the production of your bread and food system.  Because all of our distribution locations are situated within 90 miles of the very fields our grain is grown in, less fuel is used for shipping. In fact, you can be assured that throughout the seasons we are producing several types of "100 mile breads”, meaning that from grain fields to your purchase, the bread and ingredients have traveled less than 100 miles.

All of these benefits go hand in hand with Food Security*, which ensures that enough food to sustain the population reaches the community safely, and in a dependable nature.

At Wild Hive, we believe that true Food Security can only be obtained by instilling self-reliant values in community members, which increases support of local food producers, and also boosts prosperity for both regional farmers and their local economy.

Therefore, with all the benefits that micro milling provides for both the individual and the community, it clearly seems to be the most beneficial, and environmentally responsible choice.
