About Our Mill
At Wild Hive Farm, we stone-grind organic grains in our own granite stone mill to ensure that every step in the process of flour production is executed with the utmost care. By milling the grains ourselves, we can guarantee that the flour produced is of the highest and purest quality, and that its freshness is unparalleled.
About Micro Milling
Here in the Microclimate of the Hudson Valley, Lightening Tree Farm our main organic grain producer grows some of the most delectable, nutrient-dense grain in the region. Because this resource is situated only nine miles from our own Wild Hive Farm, we receive the grain at the peak of its freshness, and mill it immediately in order to achieve a quality of taste that is bursting with life. Furthermore, all of our milled flours contain 100% of their original germ content, which allows the consumer to reap the total vitamin benefits of the grains. Our course ground flours contain the highest percentage possible of their natural bran, which allows for a high level of natural mineral and fiber content.
Our practices of micro milling do not only achieve high standards of taste and nutrition. Another important aspect of our milling and wood-fired baking process is energy and fuel conservation. Due to the locality of our growers and consumers, as well as our environmentally friendly and energy-efficient business practices, we have managed to reduce our Carbon Footprint*. This means that less pollution is created by the production of your bread and food system. Because all of our distribution locations are situated within 90 miles of the very fields our grain is grown in, less fuel is used for shipping. In fact, you can be assured that throughout the seasons we are producing several types of "100 mile breads”, meaning that from grain fields to your purchase, the bread and ingredients have traveled less than 100 miles.
Our practices of Micro Milling help to support our immediate communities by providing employment opportunities to local residents, and an option to support Sustainable Agriculture with purchasing decisions, along with the basic nutritional health benefits that everyone deserves. All of these benefits go hand in hand with Food Security*, which ensures that enough food to sustain the population reaches the community safely, and in a dependable nature.
Self Reliance
At Wild Hive, we believe that true Food Security can only be obtained by instilling self-reliant values in community members, which increases support of local food producers, and also boosts prosperity for both regional farmers and their local economy.
Therefore, with all the benefits that micro milling provides for both the individual and the community, it clearly seems to be the most beneficial, and environmentally responsible choice.

- Carbon Footprint The amount of impact that an individual or organization has on the environment, based on their carbon dioxide output levels, (a measurement of pollution) which reflect their habits, business practices, and other actions.
Food Security: When a community has a dependable food system that insures the availability of nourishment. This stability enables the community members to be self-reliant. This almost always involves locally grown and processed food-systems that remove the long distance middle man from the food supply. This result ensures that food of the highest possible quality reaches to community safely and quickly.

We further dedicate ourselves to delivering wholesome baked goods by refusing to use any preservatives, hydrogenated oils, or chocolate chips(sorry). In fact, all chocolate used in our bakery is made from scratch using raw cocoa,and the lack of preservatives in our products ensures a purity of flavor that is hard to duplicate.
Consequently, in order to reap the full benefits of our natural taste sensations, we highly recommend that you refrigerate and consume all products within a week of purchase, and reheat each baked good before serving, to reconstitute a crisp, satisfying crust, and moist, warm center. This way, you can truly experience our amazingly fresh products the way they were intended to be eaten- steamy, hot, and right from the oven. When placing an online order,please remember that only registered members of CSA organizations and other food buying groups may request drop off at designated distribution sites. Also keep in mind that each delivery location and pick-up day has different deadlines for ordering, so be sure to place your ordering requests in time to ensure correct delivery.

Local Economy
One of the most important elements of Sustainable Agriculture is the support to the local economy of our community.
Wild Hive Farm does this in a variety of ways, not only by supporting local, organic farmers through grain and produce purchases, but also by providing a number of jobs to members of the community.
Many people contribute to the process of our production, and this means jobs for bakers, millers, salespeople, welders, metal smiths, drivers, local teens, and the afore-mentioned farmers. By promoting this regional food system, and raising attendance to local festivals, stores, and markets, Wild Hive Farm contributes to a flourishing local economy and sets a standard for future growth of the sustainability of the Hudson Valley.
Sustainable Farming
The best way to ensure a stable future for our local farmers is to support them financially. Wild Hive Farm does this reliably, as we buy our grains and produce exclusively from local and regional farmers, and refuse to make any substitutions with commodity grown grains.
In this way, we hope to create a prosperous and lasting network of local farms, that will provide for, and be supported by the community that surrounds them. By buying bread that is made using grains and produce from local farms, you are closing the "circle of sustainable agriculture and in turn, supporting these farms by creating a demand for their production. This allows us to continue to rely on the growers for the highest quality regional grains and produce possible. Thank you for your support to us, to your community, and to local, sustainable farming.

Wild Hive Farm Timeline:
- 1982- Wild Hive Farm is created as a venue for Don Lewis’ commercial beekeeping and pollination businesses.
- 1984- Baking begins as a supplemental farm income, featuring Middle Eastern, honey-based recipes.
- 1986- Bakery expands to include breads, and home-style baked products.
- 1989- Commercial honey production comes to a halt, and a full scale bakery begins.
- 1999- Local, organically grown, freshly milled flour begins to be incorporated into bakery products.
- 2005
- Flour begins to be milled on the premises.
- Fletcher Coddington of Arrowsmith Forge is commissioned to begin the construction of a mobile, wood-fired hearth oven.
- 2006
- All products henceforth made with 100% local organic flour.
- Organic grain harvest increases, and freshly milled flours and corn meals are packaged and made available to the public consumer.
- 2007
- Organic grain harvest increases to new levels, allowing Wild Hive Farm to expand its distribution services throughout Ulster County.
- Increased levels also allow Wild Hive to donate freshly milled, organic flour to the Dutchess Outreach Food Pantry, to help ensure sustainable food security within the community.
- Wild Hive’s mobile hearth oven takes its maiden voyage to the Family Farm Festival in High Falls, New York.
